Trenton Potatoes

3# potatoes, cooked and whipped
1/2 cup butter
8 oz package of cream cheese
1 green or red pepper, chopped
4 scallions, sliced
2 oz pimento
1/2 cup grated cheddar cheese
1/2 cup parmesan cheese
1/2 tsp salt
1/4 tsp pepper
1/4 tsp saffron
1 pint sour cream

Combine all ingrredients & put in a 2-quart casserole. Bake at 350 for 30 minutes.
